Gablerbräu, one of Salzburg’s most historic restaurants, is experiencing a remarkable revival. With roots reaching back to 1429, the traditional Wirtshaus on Linzer Gasse is entering a fresh new chapter, one that blends centuries of history with modern hospitality and the vision of its new lessee, Umair Hussain.
A House with Almost 600 Years of Stories
Few places in Salzburg carry as much historical character as the Gablerbräu.
Key highlights of its heritage:
- First documented in 1429
- Located on one of Salzburg’s oldest streets, Linzer Gasse
- Known for its traditional Wirtshaus culture
- Features historic rooms like the Wappenstube and Richard-Mayr-Stube
Stepping inside transports guests into an atmosphere shaped by wood-panelled rooms, decorative details, and centuries of craftsmanship. Each room tells part of the story of Salzburg’s social life, a meeting place for travellers, merchants, locals, and visitors throughout the ages.

Tradition Meets Transformation
Despite its deep historical roots, Gablerbräu is anything but static. In 2024, the Wirtshaus underwent a careful revitalisation designed to retain its traditional spirit while making it more inviting for contemporary visitors. The result is a house that feels refreshed yet familiar: lighter, more open, and gently modernised without losing the authenticity that guests love.
The transformation touches every part of the guest experience. The historic architecture has been preserved, but the atmosphere feels renewed, thanks to updated lighting, refined layouts, and a thoughtful approach to interior flow. The menu also bridges old and new, offering classic Austrian dishes prepared with a modern sensibility. Meanwhile, the bar area has become a natural meeting point, connecting traditional Wirtshaus culture with a relaxed, urban social feeling. The balance is intentional, a respectful blend of heritage and present-day hospitality that makes Gablerbräu feel vibrant once again.

The New Face Behind the Tradition
At the heart of this new chapter stands Umair Hussain, an FH Salzburg alumnus whose journey embodies resilience and ambition. Umair first came to Austria as a teenager and, through persistent dedication, built a career in hospitality step by step. He completed a double apprenticeship as both cook and waiter, earned his “Lehre mit Matura”, and later pursued his studies in Innovation & Management in Tourism at FH Salzburg. Along the way, he gained hands-on experience in Austrian gastronomy, learning the craft from multiple angles, from kitchen work and service to organisational leadership.
Becoming Pächter of Gablerbräu in 2024 represents a milestone in his professional path. Umair’s vision centres on preserving the historic identity of the Wirtshaus while guiding it thoughtfully into the future. His approach is grounded in respect for tradition, passion for hospitality, and the belief that such an iconic house must remain both culturally rooted and welcoming to a new generation of guests. Under his leadership, Gablerbräu is not only being maintained, it is being re-energised.
A Culinary Experience Rooted in Austria
The Gablerbräu experience is deeply connected to Austrian culinary culture. The menu pays tribute to classic dishes such as Wiener Schnitzel, rich goulash, and seasonal desserts that evoke the flavours of traditional home cooking. These favourites are complemented by fresh interpretations and a lighter, contemporary touch that reflects the evolving expectations of today’s diners. The bar adds another dimension to the experience, serving regional beers, craft beverages, and modern cocktails that pair naturally with the warm Wirtshaus atmosphere.
Whether guests visit for a relaxed lunch, an atmospheric dinner, or an evening drink among friends, the culinary concept remains honest, high-quality, and grounded in Austrian hospitality. The combination of satisfying dishes, inviting rooms, and the restaurant’s long-standing tradition creates a dining experience that feels both comforting and authentic.

Where Tradition Lives On
Gablerbräu today stands as a living symbol of Salzburg’s cultural identity. It remains a gathering place where locals come together, where students celebrate milestones, and where visitors discover a piece of the city’s history through taste and atmosphere. The renewed energy brought by Umair Hussain gives the house a sense of momentum, a reminder that tradition does not survive by standing still, but by being carried forward with care, passion, and intention.
Walking through the doors of Gablerbräu means stepping into a space where heritage is not only preserved but actively lived. It is a testament to Salzburg’s ability to honour its past while embracing new ideas and new faces that shape its future.
